I have added more themes to the list and all rejoiced! Yay!!!

I think it would be best to break this up into continents, not countries. Continents would allow many mroe countries to be represented as hosts and cohosts and be more organized. You also forgot to include any African countries. Plus, some coutries are very similar to each other, so a whole room based on America would be almost exactly like the one for Canada, as the two cultures are so intertwined.
North America would be America, Canada, Mexico, Cuba, Guatamala, Costa Rica, the Bahamas, etc.
Europe would be Ireland, Scotland, England, Italy, Norway, Greece, Germany, Czech Republic, etc.
Africa would be Egypt, South Africa, Ethiopia, Kenya, Madagascar, etc.
Asia would include Afghanistan, China, Japan, Russia (who could go between both Asia and Europe), India, Israel, Sri Lanka, etc.
Oceania (which is actually a mesh of continents) would include Australia, New Zealand, Soloman Islands, Samoa, Fiji, etc.
South America could include Brazil, Argentina, Venezuela, Peru, Uruguay, etc.
And then there's Antarctica. Which we could ignore, or fill with people in penguin suits and polar bear suits and the guests could be researchers or something.

Sample Rooms --

RPG ROOM: Summoned Monster Taimers: Pantry Raiders [aka "Pantry Raiders"]
inspired by: Shin Megami Tensei: Persona 3 & Persona 4
Plot -- Everyone in your town wakes up each morning to find that food in their pantry is burnt, including things in cans and jars. Bread seems to be affected more than anything else. Although just a high school student on summer vacation, you and your friends have awoken to a special power that allows you to enter the pantry world and confront whoever is behind this!

This room would essentially be the dungeon crawl part of an RPG game, with enemies that take the form of things like cream puff swans and bunny-shaped rice cakes. Most of the host/hero characters fit within certain arc types, like the boy who doesn't talk much [everyone calls him "MC" as those are his initials] the really smart girl who is technically the leader, the ever loyal best friend, etc etc. Guests will be invited to join the party, crawl the dungeon, experience monster summoning, and help discover who or what is behind the mystery.


FIGHTING GAME ROOM: Super Hybrid Champions Turbo EX
inspired by: fighting games, but name comes from versions of Street Fighter II
Plot -- You've received an invitation to participate in the annual world fighters tournament with a prize of 100,000 gold!

This room would essentially be a PVP fighting tournament. Like all such games, the host characters join for various reasons -- some want to prove to themselves that they are the best fighter in the world, others just want revenge, and some may have an adversary they want to confront. Alternatively, it can be in the style of Soul Calibur where everyone is competing for a specific item with their motivations varying.


HERO ADVENTURE ROOM: Heroic Legends
inspired by: The Legend of Zelda
Plot -- The princess is getting herself kidnapped every other week, and it's happened yet again. Although just an ordinary boy [or girl], you've decided to take up your father's sword, join with your friends and go on a mission to save the princess.

This room would start in a small village, progress into a short quest to obtain the legendary weapons [by day two], then progress to save the princess. However upon reaching the top of the tower where she should be, all that they would find is a note saying "I'm sorry, but the princess is being held captive in the OTHER castle."


SIMULATION: The Little Village of Mynar
inspired by: Harvest Moon, Animal Crossing, etc
Plot -- In this open-ended game, you can grow flowers in your garden, make friends and design your own home!

This room would replicate a small village in games like Harvest Moon and Animal Crossing. The general premise here is that there is some sort of special festival that is going to occur on the third day but none of the townspeople are ready for it. They all appeal to guests to help them out so that the festival will be the best one ever!

Oh I know I forgot a whole bunch that's why I put many more at the end and Continent's is a good way to sum everything up as well and do fewer rooms.

MLP won't be free reign for quite some time yet.
