Oh, that's right. Well, in your case, I'd add a bit more potato, definitely use chicken stock instead of vegetable stock, possibly some cubed chicken (cooked with the onions), and a bit of extra margarine and extra milk or soymilk.

lol no chicken for me. I'm a vegetarian. But I'd definitely add more potato.

This soup is smelling so good.
Ah, if you're a vegetarian, this is even easier. Add coconut milk and more potato, and some cilantro and curry powder. That'll take it into a really nice Asian taste, and it'll give you some much-needed calories.
