It's beyond easy. Britney Spears could make pumpkin soup. Anyone can cook, if you know how to follow directions.
Chop one whole onion. Saute in 1 teaspoon of canola oil in a nonstick skillet until gently browned. Set aside.
Chop 3 potatoes into (roughly) half-inch cubes and toss into a big soup pot filled about halfway with water and 2 tablespoons salt. Boil until potatoes are almost, but not quite, soft when squished. Drain and rinse.
Add onions, 1 8oz can of pureed pumpkin (such as Libby's), 1 cup of milk or soymilk, a tablespoon of butter or margarine if desired, and then fill the pot with chicken or vegetable broth to about 2 inches from the top.
Spices: 2 more tablespoons of salt, vegetable bouillon, or chicken bouillon 1/4 C fresh parsley or 2 tablespoons dried parsley 1 teaspoon freshly ground black pepper 1 dash basil 1 dash oregano 1 dash sage 1 dash nutmeg

Sometimes I also add a little bit of coconut milk and some cilantro for a bit of a Thai feel. But if you do that, remove the nutmeg and the sage from the spices, and take out the milk or soymilk because you won't need it.

If you use fresh pumpkin (cubed) instead of pureed canned pumpkin, you can also toast the seeds with a little olive or canola oil and some salt and maybe a bit of garlic, and that's a really great treat. Very crunchy.

Heh. I'm told my recipes have that effect on people. This is a really healthy soup, too. If you're doing Weight Watchers, the entire pot of soup is about 20 points. Take out the milk and it's 18; use the small can of pumpkin instead of the big one like I do, and it's 15; don't add margarine, and it's 14. And it makes something like eight bowls of soup, so each one is about a point and a half. Since a person gets a minimum of 20 points per day, you could conceivably eat this soup all day and still have points left over at night.
