Potlucks are hard. I need a recipe that:

1) is healthy
2) does not contain mammal meat
3) does not contain dairy products
4) does not contain nuts
5) can be transported easily & kept at reasonable temperatures
6) does not have really oddball ingredients
7) does not have tomatoes (recent scare.)

Hmm, when do you need this info? I just got some new computer parts in and im heading over to a friends so he can help me put em in. His mom's a health food chef. I can ask her tonight if you'd like.


Wow. heart I was planning on going grocery shopping some time tomorrow. Pot luck isn't until Saturday.

Oh allergies/lactose intolerance/salmonella/dieting ... and it's only two people I'm really concerned about xd I would hate to think what I would be narrowed down to if I took everyone into account. (Probably water.)

I'm actually planning on being a chef. Id help you myself but i don't know much yet. Ill write down this info and ill ask her at some point today.

I've been doing web searches but every time I find something promising, I end up seeing it has fresh tomatoes or a touch of cheese. I'll probably just modify something if I can't find anything... or go the easy route with a (mostly healthy) dip and pita chips (which aren't that good for you but well, other people will like them) and maybe chopped celery.

I'm kind of surprised how many people list mac & cheese as a health food.

So it looks like I'm starting my move-out earlier than I had thought. My original self-imposed deadline was before June 31 because that would give me plenty of time to do it without feeling rushed and still finish everything before Hiro comes back, but I just found out that the one roommate I had some difficulties with will be coming back this Monday. I know it will cause drama if I'm moving things while she's here, so I decided to start packing and moving stuff today. My new goal is to have everything gone from here and in the new apartment before Monday. Besides, I'm already paying for the new place so I might as well be living there.

Looks like backlog will have to wait again. I'll get to it eventually though. sweatdrop

Keys: Good luck with your pot luck dish! It's always hard to accommodate so many different preferences. gonk sweatdrop

Ok i got it. It has one oddball ingredient but it could be found at your local shaws (considering you live near a shaws)

Confetti Quinoa
This recipe can be prepared with many different fruit or vegtable juices to complement varying flavor profiles

Yield: 6/1 cup servings

Ingredients
1/2 cup Quinoa, rinsed, drained
3/4 cup Barley
1/2 tablespoon Olive Oil
2 1/2cups Carrot Juice
1 Each Spanish Onion, Small, Macedoine
1 teaspoon Sea Salt
1/4 teaspoon cardamom, ground
3 each Scallions(green onions), 1/4 inch slices
{just ask for them if you cant find. they are more like
onion shoots}
2 cloves Garlic, roughly chopped
1 cup Red Bell Peppers, small, parmentiere
1/2 cup PINEAPPLE, ( biggrin ) fresh, 1/2 inch wedges
1 each Green chilies, hot, minced

1 1/2 Tablespoons Honey

Method of Preparation:
1. Heat large saucepan over medium heat. Add olive oil. Saute onions, scallions, chile, and garlic until soft. Add red bell pepper, stir to combine. Add quinoa and barley stir to quickly toast. Add honey
2. Add carrot juice, cardamom and salt, and bring to boil. Reduce heat and simmer the quinoa until most of the carrot juice is absorbed, about 10 min.
3. Places the pineapple on top of the quinoa. Cover pan with a lid and allow the pineapple to steam until cooked through, about 5 minutes.
4. Stir the remaining Ingredients together until well combined. Serve in a bowl and garnish with parsley (optional)

Chefs Notes: Additional seasoning and/or different fish may be used for more intense flavor.
1 cup serving= 262 kcals, 6.27g fat, 11.35g pro, 46.22g cho. Rich in Vitamin A

Also, look for the Ancient Harvest brand of Quinoa.

Thats about it. The recipe had shrimp, chicken, and tomatoes in it but i had my friends mom take those ingredients out. So this can either be served hot or cold. Will that be all my lady?
