You bake a potato, cut it in half the long way, scoop out the insides, mix insides with sour cream, cheese, and bacon then put that into the potato "hulls" you scooped out. Then you finish cooking it. Thus twice baked. Each potato makes two. Think of baked potato + potato skins + mashed potatoe middle = bam
