Every pic of a Barloz I see has it shown with three weapon systems. So Why is it all the stats of a stock version I see only has stats for one laser cannon?

Good question.
Would you say that flying an Imperial shuttle is similar to piloting a freighter? Cause that's practically what they are, right?

I'd imagine the Lambda shuttle being more responsive than a freighter due to the wing design and its usual parking habits. Otherwise yes.

I thought the typical Trek Naval Battle didnt involve fighters, more of capital ships maneuvering and blasting at each other.

They are used, but they're not nearly as effective in Trek as in Star Wars. Plus most Federation starfighters have a rather sizable crew when compared to their combat role. The Maquis use Federation Starfighters almost exclusively. Their biggest use was during Operation Return when several hundred starfighters were used in hit and run attacks during the opening of the battle. (600 Feddies cap ships vs 1200 Dominion and Cardi cap ships)
But yeah, starfighters are pretty rare simply because of the speed, maneuverability, and accuracy of fire that the larger ships can manage.

Operation Return....does that have another name? Because the size and nationalities of the forces involved seems familiar.

That ship isn't canon, anyway. The only Federation fighter is the Peregrine-Class.

Speaking of fighters, here's a modeler's conception of the Z-95 model similar to what Han once flew in the Corporate Sector: Swing Wings, Triple Blasters, its a darn sight prettier than the typical Z-95. http://www.alfredsmind.ca/z95m1pg.htm

looks nothing like a z-95 though... or even an x-wing... or anything, The only similarity is the nose. It's like taking the hood ornament on a rolls royce and putting it on a chevy, and calling it the same...
