I know a really nice pagen lady that could teach me all about pagenism. I still don't know what I would want to be though.

If you don't know wht you'd want to be, religioustolerance.org is a wonderful jump-off point for balanced religious research. Noticably less balanced but still wonderful is infidels.org.

I realised that where I thought my beliefs lied, I believed nothing. Now I realise that one can only believe the truth. I can never lie to myself and pretend that I am part of a religion now. No, I can't 'change religion' unless I lose my mind.

and yep you sure can, you can do what ever the hell you like really. I was not religious, then a church goer, then christian and back to not religious.

Of course you can. But, I think it would be a better idea to find a religion or system of belief that you already agree with, rather than choosing one that seems neat and deciding to believe that. Or, if you're like my uncle, and can't find one, make up your own.
I've never changed my beliefs, though.
