The oil from a sweet variety makes a soothing ingredient in internal medications and can also be used externally as an emollient. Almond butter makes a rich protein substitute for peanut butter, usually well tolerated by diabetics. Sweet Potato, Pumpkin & Prawn CakesServes 4 200g strong white bread flour 2.5ml salt (half a teaspoon) 2.5ml tsp dried yeast 175ml warm water 1 egg, beaten 200g raw prawns 225g pumpkin, peeled, seeded and grated 150g sweet potato, grated 2 spring onions, chopped 50g water chestnuts, chopped 2.5ml chilli sauce 1 garlic clove, crushed 1/2 juice from a lime Vegetable oil for frying Lime wedges for garnish 1. Sift together the flour and salt into a large bowl and make a well in the centre. In a separate container dissolve the yeast in the water until creamy, then pour into the centre of the flour and salt mixture. Pour in the egg and set aside for a few minutes until bubbles appear. Mix to form a smooth batter. 2. Peel the prawns, if necessary, then place in a pan with just enough boiling water to cover. Simmer for about 2 minutes or until the prawns have turned pink. Drain, rinse in cold water and drain again well. Coarsely chop the prawns, then place in a bowl with the pumpkin and sweet potato. 3. Add the spring onions, water chestnuts, chilli sauce, garlic and lime juice and mix well. Fold into the batter mixture carefully until evenly mixed. 4. Heat a 1cm layer of oil in a large frying pan until really hot. Spoon in the batter in heaps, leaving space between each one, and cook until golden on both sides. Drain on kitchen paper and serve with the lime wedges. Taken from 500 20-Minute Recipes by Jenni Fleetwood. Apple and Cinnamon MuffinsMakes 6 1 egg, beaten 40g caster sugar 120ml milk 50g butter, melted 150g plain flour 7.5ml baking powder Pinch of salt 2.5ml ground cinnamon 2 small eating apples - peeled, cored and finely chopped For the topping: 12 brown sugar cubes, coarsely chopped 5ml ground cinnamon 1. Preheat the oven to 200C/400F/gas 6. Arrange 6 paper cases in a muffin tin. 2. Mix the egg, sugar, milk and melted butter in a large bowl. Sift in the flour, baking powder, salt and cinnamon. Add the chopped apple and mix roughly. 3. Spoon the mixture into the prepared muffin cases. To make the topping, mix the crushed sugar cubes with the cinnamon. Sprinkle over the uncooked muffins. 4. Bake for 30-35 minutes, until well risen and golden brown on top. Transfer the muffins to a wire rack to cool. Serve them warm or at room temperature.
