You mean "theme" as just being orchestral, correct?
In that case, I'll say Betelgeuse Opening Theme (from Beetle Juice, of course), Snow Dance (I think that's what it's called, from Edward Scissorhands), Roxie's Suite (from Chicago), or Jenny's Theme (from Big Fish).
Though, I absolutely love the jazz tracks tacked on to the end of the Corpse Bride Soundtrack. An unspeakable amout. Uuugh, Elfman jazz. heart

Oooooooooooooh it's like having to choose a favorite cousin...Hmmm...I'd have to say that my favorite theme is tied between "Delores Claiborne" and "Pee Wee's Big Adventure."

Nightmare Before Christmas (songs and score....they leave out the best little bits of score on the soundtrack! listen to the actual movie and see what i mean) for me....um...and Pee Wee of course....and Corpse Bride.....heck yes, Ami, I second that about the jazz 3nodding , ...oh! and Wisdom! The movie with Emilio Esavaz! I've never seen it, but some clips of the score are on Music for a Darkened Theatre Vol. 1, and i find it amazing. He performed it all himself...on his own synthesizers....in his own basement...wow 4laugh heart

I know!! The Mayor's little theme isn't on the soundtrack, which is strange, because it's a fairly long segment, but it's the only bit in the entire soundtrack that has a prominent bassoon melody. Go figure. whee

Heh....I know exactly how you feel. OOooh...I've been thinking of doing a kind of Elfman Fantasia (my mom actually suggested it, but I think it's a good idea.)
Like, taking his musical scores and animating or filming what they make me think of, putting those images to his music. I dunno, I just thought it would be cool.

Okay, here we go.
I like Sally's theme (and just about eveything else) from The Nightmare Before Christmas, everything from Edward Scissorhands, Chicago, and Corpse Bride, and the Main Titles from Charlie and the Chocolate Factory sends me into a musical joygasm every time I hear it.
