Everything.
Though, to be honest, this is a bit like trying to define love. It will be different things to different people, because different people are looking for different things in art.
I also think art is:
Emotion
Love
Honesty
and
Faith.
But, I suppose, most of all, art is everything, and everything can be art.

I think it was the point, to have everyone think of it differently and then see everyones interpretation. Though practicing the same excersise with the world 'love' would be interesting too. : )
