That map right there would be fine. Since we probably won't go everywhere in the world, we can use that, and then we can use a map of the area we're in. Is that too complicated?

I am not able to give suggestions, as the only map I'm really familiar with is the Nords world. : / But, I really don't care which one we use.

What about the local races you would prefer then? I don't know. I am unfamiliar with all of the locales with the exceptions of Morrowind and Cyrodiil. And I supremely versed in the rough and tumble culture of the Dunmer.
Which leads me to an idea, maybe we could do a morrowind campaign. Like maybe there was a colony ship on the way to solstheim and it crashed somewhere on Vvardenfell? I do not know, just a thought. What do you think?

If you're going to do a Morrowind RP, you're going to need to stay away from the time from the Fourth Era. The Red Mountain erupted near the beginning of it causing all of most of Vvardenfell to become a volcanic wasteland and most of the residents fled to Skyrim, Black Marsh and Cyrodil.
Just a heads up.

I prefer Cyrodil over Morrowind...? Especially if were gonna be pretty racially diversified.

Interesting. I think that should work, though I do not know much about Morrowind. Is it alright if my character is more Skyrim-esque, i.e. dual-wielding and horseback combat?
