Most Fire types are pretty blah when it comes to stats. Infernape is probably the only tolerable Fire type due to STAB Flare Blitz and Close Combat, provided yu don't count Heatran.
Despite STAB, most Fire moves are best left to non Fire special attackers who can get better coverage.
Also don't dump Gyarados if yu don't want a Water tank. Gyarados is like in the top 5 non Uber offensive attackers in the game.
As far as Flying goes, Staraptor or Honchcrow are pretty much the only viable birds. Nice stats and good move pools.
Oh and for Psychic, Espeon or Alakazam are the best two non Uber choices. As much as I love the Eevee family, I have to give the edge to Alakazam for slightly higher Sp.Atk and Speed, as well as access to Focus Blast. But be careful though because unlike in Gen 1, today's metagame is very mean to Psychic types. With OU populated by Phys Attackers with STAB Pursuit, the advent of U-Turn and more people with Megahorn, and LOADS of Dark types, Psychics really suffer.

I'll keep him in mind for offense. I'll train Staraptor some more and improve its' move pool. Also, if anyone can't recommend a better non-legend psychic type, then I'll go with Espeon.

I believe I have an Alakazam as well.
I'll make Eevee a Vaporeon then over Milotic. Saves me the trouble of dealing with happiness for both Pokemon...unless I change my mind about not keeping Gyarados. Gyarados has high attack, yes, but if I encounter an electric-type, it is ******** far as Blissey goes, its piss-poor attack/defense stats are making me wary of it.

Feebas evolves from max Beauty, not happiness.
Also Blissey's HP is the reason her other stats are so low. Look at her Special Def and movepool - she's uber for a reason. My Bold one can usually eat an Earthquake or two without any boosts at all.

Hang on...since I'm on route 216, how well would you recommend Glaceon?Forget this...compared Vaporeon to Glaceon...Vap's the better choice.
Also, what are some good tank pokemon...of any type?

With Dragon Dance and Waterfall, it'll outspeed and STAB flinch anything that comes at it, and OHKO's pretty much every elec in the game bar Rotom.
And as far as Tanks go, Blissy is pretty much the best non Uber Sp.Tank in the game. Snorlax and Rhyperior fit well for Phys. Tanks. Bronzong and Metagross fit well as balanced tanks.
Edit: And there's nothing bad about Glaceon. It has the strongest non Uber Blizzard/Ice Beam in the game. It's movepool and low speed kills it's usefulness, is all.

 Rest/Sleep Talk Milotic is a great tank moveset because of Marvel Scale, but it doesn't leave you with much room for type coverage.
