Are there any items you really wished I had?:I love watermeats and video games, so those kinds of items would be cool, but I usually get my fix whenever you offer customs anyway. If you animate items, they might be popular.
Spring Item Suggestions: Easter/St. Patrick's Day/ General Spring items-- Windchimes, pet rocks, various bugs (lady bugs), frogs on lily pads, flower arrangements, maybe something to depict the rain in spring (clouds? umbrellas?), picnic basket with accessories, bird nests- some with eggs, some with chocolate or dyed eggs for Easter, bunnies/ducks made out of jelly beans, Jelly Belly tins (those are cool), rainbow colored clovers, various good luck charms, worry stones (don't know how spring like that is, but charms made me think of them). Hope these help. ^^

How can I improve the shop layout: It could just be me but I don’t like keeping dead shops in affiliates section and letting it get so big that the page slow down when you load it. So I suggest checking shops once a month or so to make sure they’re still open, but that’s just how I roll. Lol
Are there any current item types that you wish had more versions/flavors? : There’s opportunity with the juices in drinks but I would advice re-doing those before expanding since there is a lot you can do with juice glasses like with adding fruit bits to it for example.

Other Suggestions/Comments/etc: When you do new items or redo old ones make sure to try to keep proportions similar to other items so they fit easier with other items in meals. Also I think the cupcakes in the regular menu may be due for an update, they’re not quite as good as the ones you have pumping out with limiteds. Annd you do fine as a mini shop owner.

Are there any items you really wished I had?: Random Vegetables to match the fruit, both pixel AND softies. (I love radishes by the way). Chinese take out boxes and foods. Takoyaki, Dango, Onigiri and Taiyaki.
