Delicious Quinoa Risotto


Appliances Needed:
Stove with 2 Burners/Coils, 2 Pots
Difficulty Rating: stressed

Ingredients:
(Serves 1-2)
-1/4 cup of Quinoa rinsed
-600-700mL of LOW SODIUM chicken stock (vegetable can be substituted for a vegetarian version)
-2 Stalks of Celery Diced
-1/2-1 Small Onion Diced
-1-2 Cloves of Garlic Finely Chopped
-1-2tbsp Olive Oil
-2 Handfuls of Shredded Parmesan Cheese
-Salt/Pepper
-1/4 Cup Dry White Wine, Vermouth, Sherry, etc.

Method:


1 ) Prepare Ingredients (Wash Quinoa, Wash and Cut Vegetables and Garlic)
2 ) In one of the pots over medium-medium-low heat place olive oil in to pot and add onions.
3 ) Gently saute onions until they are translucent but not browned (5-10 min).
Meanwhile, place stock into a separate pot and bring to a simmer.
4 ) Once onions are cooked, add garlic and celery and saute (about 3-5 minutes).
5 ) Add quinoa to the oil and vegetables and saute (about 3-5 min).
6 ) Add alcohol to the quinoa, stirring at medium heat until the liquid disappears.

7 )Add a ladle (a bit less than 1/4 cup) of the simmering stock to the quinoa and stirring occasionally until it the liquid disappears.
8 )Once liquid has disappeared, add another ladle of stock, and repeat.

9 )When you start to get low on stock, begin to start tasting your Risotto, You'll know it's "done" when it has a soft-fluffy outside and just a hint of "bite" left in the center. (Don't worry, if it's done before you use up your stock, just stop. If you run out of stock, use boiling water.)
10 ) Once quinoa is "done" add stir in Parmesan Cheese and cook another 2-3 minutes.
11 ) Taste, and adjust seasoning with salt and pepper.

OPTIONAL: Add 1-2 tbsp of butter along with Parmesan, not the healthiest in the world but delicious none the less.



Notes:

-It is VERY important to use low sodium chicken stock, otherwise you'll end up with a ridiculously salty risotto as the Parmesan is quite salty to begin with.
-To make this more of a full meal, feel free to add cooked/frozen veggies, or even cooked chicken.
-This makes a good vegetarian dish, as quinoa contains a large amount of complete proteins.
