City Chef



Cooking oil is a staple in most pantries and is used frequently by the chef(s) of a household to prepare any number of culinary variations. The preservation of cooking oil is often overlooked until one goes to pour a spoonful into a pan and it smells, looks (or tastes) funky. Such rancidity often goes unnoticed for some time because most oils bought at a store are highly refined and deodorized; but aside from the taste factor, rancid oils present significant health risks such as heart disease, atherosclerosis, and cancer. Clearly, this should be avoided at all cost by ensuring that cooking oils are stored properly from the time they leave the store.

Work for family or friends (retail stores, services, small manufacturing operations, and every other type of business). Do you have relatives or friends who own or run businesses? Would you be comfortable working with them? In tough times, it is important to put your pride aside and ask for help. But in this case, the help would be mutual. Your friend or relative would be the lucky recipient of your services, and you would be gainfully employed, working for someone you already know and like. Contact every friend, relative, or acquaintance who owns or runs a business, and ask about their needs and challenges.

In terms of her career she started off as a journalist and fairly quickly rose through the ranks to become deputy literary editor at the age of 26. It was after her stint at the Times that she decided it wasn't the life for her, deciding instead to become a freelance writer then finding her niche writing a food column in Vogue. The rest, as they say, is history she released her first cook book ‘How to Eat' in 1998, her first television series wasn't far behind. Further recipe books and television series followed. She is famous for her flirtatious style of presenting but I love her food which is simple and homely yet delicious.

Another interesting group is nearing retirement and a few of these individuals are sometimes complacent - or worn out - hoping to make it to retirement. However, some remain highly productive via inner motivation. Some may work on teams motivated through incentives along with team spirit and this can increase motivation and productivity. However, other teams become angry with an individual high producer, exert pressue to slow down, and are successful in lowering thsat person's output.

Well, I've written enough for now. We've examined the Intellectual Entrepreneurship program at University of Texas at Austin, some pros and cons about the Eds and Meds” economy model, other Smith County industries (oil/gas, restaurants)and Bilingual All-level Academic Vocabulary (BALAV), and the CTN retention program. By the way, I bet a major reason for Developmental English/Writing courses in community colleges and open-admissions colleges is the over-emphasis on literature in high school. Stay tuned.
