I don't know.. for me its always had something to do with the absolute truth of the statement. You can go around wishing people Happy New Year, Happy Kwanzaa, Happy make your own holiday, but Christmas is different. Whether people want to believe it or not, the fact that Jesus came down to earth has blessed everybody, regardless of their religion because without Christ this world in which we live has no reason for existence, since there would be no hope of salvation for anyone.
So, Merry Christmas to the Christian, and Merry Christmas to the non-Christian in hope that through Jesus they might one day be a Christian.
A voice cries: "In the wilderness prepare the way of the LORD; make straight in the desert a highway for our God. Every valley shall be lifted up, and every mountain and hill be made low; the uneven ground shall become level, and the rough places a plain. And the glory of the LORD shall be revealed, and all flesh shall see it together, for the mouth of the LORD has spoken."

Well, based on my own experience as a cashier at Walgreens, I've discovered that even though people say "Happy Holidays" is more politically correct, I actually offended more people when I told them "Happy Holidays" than when I said "Merry Christmas."
A lot of the people in my area are Baptist, Catholic, and Methodist, and are tired of not being able to acknowledge their faith in public. As one of my customers explained to me, saying "Merry Christmas" is now being considered almost a courageous thing to do in the business world.
If I know my customer is not Christian and would be deeply offended, out of respect for them, I say "Happy Holidays." But most of the time, I just go ahead and say "Merry Christmas." ^^
