Well I've written a few short stories, and my best are horror stories. (Not really bloody, just a little.)
Well here are my questions:

Can anyone steal your work when you submit them?
==I'm scared of this, because I'm going to get a collection of 10 of my best stories and send into a publisher, and I don't want anyone to steal my ideas. I'm counting on being a writer when I get a little older, so I don't want anyone claiming my ideas as their own.

And is it okay if there's a bit of blood?
==There's only a bit of violence, where two people are shot. Is that okay?

Oh, and if I do post my stuff, I'll create a new account just for that.

no nobody can steal your stories unless they write it down on a piece of paper and retype the whole story and rename it
Just make sure that the publisher you send them to is authentic and true. If you submit them to a reliable publisher, then you should have no worries.
Blood is absolutely fine. Many adult (and sometimes young adult) stories have pages bathed in blood. Don't worry about it.
