Sorry, no. If you don't want it posted on Gaia, you can put it in a Google Document, make it publicly viewable, and post a link. It'll still be not posted on the web, or searchable online unless you choose that option, but everyone will be able to read it, which is the point.

Nope; any winter holiday. That covers Christmas, Hanukkah, Solstice, New Year's Eve, Kwanzaa, Epiphany, and Saturnalia, as well as probably a bunch of others.
