And at the time Lee could open 5 gates as a genin. Yeah I think Kishi forgot about the 8-gates for.... most of the series? But oh yeah he finally realized it's OP and brought it back. Seriously, you would think that all the Kages would at least open a few gates as a given with these fights by now

Not just anyone can open the Eight Gates. It takes a LOT OF skill and training, since even Kakashi can only get up to about to the fourth on a good day. Since Gai has ever only focused his training on taijutsu and the Eight Gates, he is obviously an expert and doesn't even suffer from what a normal person should suffer from the Eight Gates. Fifth Gate = bones begin to fracture and muscles can rip. Sixth = Bones can break from pressure and blood vessels pop. Seventh = Bones are meant to shatter and muscles rupture. Eighth = Heart attack that no one can live through. I suspect Gai will literally burn up too.

he has hardened himself so much, he can handle Seventh Gate and only be fatigued a bit...

Really? I am sure he said up to like 3. Oh well, yeah, Gai is just that awesome that he can endure the power of the Eight Gates... like no one else can... though Lee is doing pretty damn well...
