I got a new food processor for my birthday and I decided to try making my own veggie burger for Earth's Day (I also had carrot chips, which are a bit sweet for me, though.)
Here's the recipe (it wasn't easy to make it perfect at one sitting, but it wasn't too bad.)
Half a potato, cut in cubes and cooked but still firm
1/2 cup carrots, cut up
1/2 cup broccoli
Two big slices of zucchini, cut into strips
1/2 cup chickpeas
1/2 cup small white beans
1 cup panko crumbs
2 cloves garlic, chopped
Salt and pepper to taste
Chop up the potato in food processor.
Then mash up carrots, broccoli, and zucchini.
Mix together chickpeas and beans in the food processor.
Now mix together the whole mess and add panko crumbs and seasoning, too.
Finally, puree the stuff until it's soft enough to form into patties.
Spray the pan and cook the patties.
You can put the patties in whole wheat pita pockets or toasted burger buns and add anything you like to them. smile I also think veggie burgers like that are a great addition to your regular diet as well as a good way to get rid of leftover vegetables, beans, and bread crumbs, too!
And BTW, I did this by trial and error (I don't think even this recipe I have posted is 100% ideal), so you can experiment yourself some more (like adding onions, which I hate as well as different kinds of seasoning to your liking.)
