i went to loblaws today and omg! there was a chef student there telling me about this recepie so i tried it!! it's so great, you can fry it but i baked it then fried it with only a tsp of olive oil
it's
1/2 cup apple sauce (unsweetened) - i used 3/4th of a cup though 4laugh
a white onion - i used half bc i was only serving two hehe
1/3 cup hoisin sauce - i'd use a little more if you think it might be too sweet whee
2 tsp grated or finely diced ginger 4laugh
chili powder/flakes, salt and pepper to taste

okay so the above is the recepie for the sauce, then for the chicken you

cut chicken into bite sized pieces (lean boneless,skinless,chicken breast)
fry until 3/4 cooked - i baked it though, bc healthier and i only have one frying pan sweatdrop

while the chicken is cooking let your sauce simmer on a low-medium temp, when the chicken is ready mix it with the sauce in the frying pan and wait until the chicken is cooked and the onions are tender and it's ready biggrin

also! if you're a vegan im sure that you could use tofu to substitute although im not sure is hoisin sauce is vegan whee
edit:i forgot to say, the chef i was speaking with recommended to eat it with rice
