While I wouldnt personally run XP on that machine, you certainly could. It looks like you've fairly comprehensively upgraded it, and running Windows 2000 shouldnt be the least bit difficult, I've run it on much less.
Also, for around ten bucks you can get a significant upgrade on your processor.
