There are quite a few that I wish had another season but for now,
Only Murder Princess and Ah! My Goddess! come to mind.

Petshop of Horrors, the short OVA was excellent but I would love to see more stories from the manga.

Kyo Kara moau: Great series, but I want to see Yuuri and Wolfram actually get some where relationship wise, even though I know that was not a focus. That and there is so much from the light novels that I want to be able to see..or at least read if they ever get around to translating them.

Witch Hunter Robin: Great series, but you can't leave it there I want to know what happens next darn it!

Blood+: at least a frelling one shot where Saya and Hagi get reunited.

i'd like some OVAs for Angel Beats!, a second season for Suzuka to finish it out, I'd like to see more Shuffle, but It finished well enough, And I know there are others but I can't think of em!
