And yes, it does evolve. When the first gen gets the new gen the second gen will get what the first gen was (third gen turning into the previous 2nd gen etc). When the item has stopped evolving every gen will get every pose after a while. The first gen will have all poses the instance it stops evolving, whereas the second gen needs more time to get all of them (I don't know how much time passes until second gen has all poses as well). The third gen needs longer of course, the fourth gen even longer and so on. The Case of Pietro is a special case though.
And yeah, if your item is a rapid EI and has already stopped evolving or is an older 2nd gen it will already have finished evolving.
