Green Chili Corn Tamales ------------------------------- Makes 12
Half Cup Crisco all Vegetable Shortening 1/4 Cup Warm Water 1/4 Teaspoon Salt 1 Teaspoon Baking Soda 1 Pound Masa One 4 oz Can Diced Green Chilies Cheese One Can of Corn, drained On bag of Corn Husks Pressure Cooker
Melt lard in microwave in large dish. Pour in water. Add more if necissary. Add salt and Baking Soda and stir. Add crumbled masa and mix until it reaces a workable consitancy, mashing any hard masa lumps. With right hand hold leaf on palm with thumb gripping outer edge and spread masa about three inches from bottom of leaf and place on counter. Once all are on counter add chili, cheese, and corn. Place in hand and fold left side over filling, fold right side over and fold leaf over where masa begins. Add water to pressure cooker. Place standing up in pressure cooker and secure lid closed. Set oven to medium heat until cooked (kitchen will fill with smell once done.) Let cool for 30 minutes to an hour. Enjoy biggrin
