((This is for anyone still doing low carb. BTW, it isn't bad for you, people just don't know how to exercise and eat vegatables the right way.))
"Mashed Potatoe Cauliflower"
1.) Boil cauliflower. 2.) Add lots of cheese and bacon. 3.) MAsh toghether.
Voila....almost mashed potatoes.

I totally agree with you. I have to be on a low carb diet. Otherwise I will continue to gain more weight cause of illness. Most people that do low carb don't exercise or they think that means eat lots of red meat and no veggies at all. lol I just have 3 cups of veggies a day and the rest seafood or chicken or turkey. Occasional red meat ( I do love my steak). ok I will post a few of my faves;
LOW CARB SOY PUMPKIN PIE
1½ cups unsweetened silk soy milk 15 ounces plain pumpkin ½ cup Splenda brown sugar egg whites equivalent to 3 large eggs 1 teaspoon ground cinnamon 1/2 teaspoon ground ginger 1/2 teaspoon ground nutmeg 1/4 teaspoon ground cloves 1/2 teaspoon lite salt 1 low fat graham cracker pie crust
Whisk pumpkin and spices (cinnamon, ginger, nutmeg, cloves, and salt) together over medium heat in a medium sauce pan. When the pumpkin begins to cook, whisk in the brown sugar. Once the mixture is fully blended, scrape the sides of the saucepan down and whisk again. Add soy milk and whisk some more. Once the mixture begins to bubble and splutter, remove from heat. Place the three eggs into a blender and blend on high for 3 seconds. With blender on low, slowly add pie filling from pot. Pour filling into pie crust and bake at 350°F for 35 minutes or until center of pie is jiggly when pie is rotated gently. Refrigerate.
LOW CARB LEMON-MINT SHRIMP I eat this over a cup of salad for a meal.
25 med-large Shrimp Lemon flavor and No-stick spray Mint sauce (Black & Crosswell brand)
Remove shrimp from shells and de-vein. Generously coat frying pan with both the mint sauce and lemon no-stick spray. Saute shrimp until they are evenly cooked and pink in color. Enjoy this recipe as it has approx only 1-2 carbs and 21 g protein, and virtually no fat.
LOW CARB EASY EGG MUFFINS I also add a lil bit of veggies like a omelet in these sometimes 6 eggs 6 strips of bacon, cooked & diced 1/3 cup shredded cheddar cheese** 1/2 small onion, diced 2 tbsp water salt & pepper to taste Pam Fat Free cooking spray Medium size cup cake/ muffin pan
Preheat oven to 350 Cook bacon in microwave with paper towels to help absorb the excessive grease. Cook until bacon is almost well done. Diced into small pieces, then set aside. In a small non-stick skillet spray with Pam and saute' your onions until they are soft. Set aside. In medium mixing bowl combine the eggs, bacon, cheese, onion, water, and salt & pepper. Spray cup cake/muffin pan with Pam and spoon in the mixture evenly into all 6 compartments.
