Applesauce Bread
1/2 cup (1 stick) unsalted butter, softened 1/4 cup dark brown sugar 2 cups all-purpose flour 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon ground cinnamon 1 teaspoon allspice 1 teaspoon vanilla 1 cup applesauce 2 large eggs 1 cup raisins 1/2 cup chopped walnuts Preheat the oven to 350 degrees F. Grease and flour an 8 by 4 by 3-inch loaf pan. Cream the butter and brown sugar. Add the remaining ingredients except the raisins and nuts. Mix well until blended. Stir in the raisins and nuts. Pour into the loaf pan. Bake for 60 to 65 minutes.

English Muffins
1/2 cup non-fat powdered milk 1 tablespoon sugar 1 teaspoon salt 1 tablespoon shortening 1 cup hot water 1 envelope dry yeast 1/8 teaspoon sugar 1/3 cup warm water 2 cups all-purpose flour, sifted Non-stick vegetable spray Special equipment: electric griddle, 3-inch metal rings, see Cook's Note* In a bowl combine the powdered milk, 1 tablespoon of sugar, 1/2 teaspoon of salt, shortening, and hot water, stir until the sugar and salt are dissolved. Let cool. In a separate bowl combine the yeast and 1/8 teaspoon of sugar in 1/3 cup of warm water and rest until yeast has dissolved. Add this to the dry milk mixture. Add the sifted flour and beat thoroughly with wooden spoon. Cover the bowl and let it rest in a warm spot for 30 minutes. Preheat the griddle to 300 degrees F. Add the remaining 1/2 teaspoon of salt to mixture and beat thoroughly. Place metal rings onto the griddle and coat lightly with vegetable spray. Using #20 ice cream scoop, place 2 scoops into each ring and cover with a pot lid or cookie sheet and cook for 5 to 6 minutes. Remove the lid and flip rings using tongs. Cover with the lid and cook for another 5 to 6 minutes or until golden brown. Place on a cooling rack, remove rings and cool. Split with fork and serve.

Southern Biscuits
2 cups flour 4 teaspoons baking powder 1/4 teaspoon baking soda 3/4 teaspoon salt 2 tablespoons butter 2 tablespoons shortening 1 cup buttermilk, chilled Preheat oven to 450 degrees. In a large mixing bowl, combine flour, baking powder, baking soda and salt. Using your fingertips, rub butter and shortening into dry ingredients until mixture looks like crumbs. (The faster the better, you don't want the fats to melt.) Make a well in the center and pour in the chilled buttermilk. Stir just until the dough comes together. The dough will be very sticky. Turn dough onto floured surface, dust top with flour and gently fold dough over on itself 5 or 6 times. Press into a 1-inch thick round. Cut out biscuits with a 2-inch cutter, being sure to push straight down through the dough. Place biscuits on baking sheet so that they just touch. Reform scrap dough, working it as little as possible and continue cutting. (Biscuits from the second pass will not be quite as light as those from the first, but hey, that's life.) Bake until biscuits are tall and light gold on top, 15 to 20 minutes.

Sour Cream Muffins
2 cups self-rising flour 2 sticks butter, melted 1/2 pint sour cream Preheat oven to 350 degrees F. Combine all ingredients and spoon into small, un-greased muffin tins. Bake for 20 to 30 minutes. Mini pans use 15 mintues.

Garlic Bread
4 cloves garlic, minced Salt to help mince garlic if doing it by hand. 1/4 cup butter, softened 1/4 cup extra virgin olive oil 2 tablespoons Italian Seasoning 1 loaf french or italian bread, sliced thickly.
Mix first 5 ingredients, spread on 6th ingredient. Brown in 450 degree oven or under broiler until toasty.

Cranberry Nut Bread
This is a quick bread, cooked in a 9x5x3 pan.
I love it... crunchy nuts, wonderful cranberry taste, sweet... sliced almost thin and buttered or toasted and buttered, there's not much better for a quick snack.
2 cups flour 1 cup sugar 1 1/2 teaspoon baking powder 1 teaspoon salt 1/2 teaspoon baking soda 1/4 cup shortning 1 teaspoon grated orange peel 3/4 cup orange juice 1 beaten egg 1 cup chopped cranberries (raw) 1/2 cup chopped nuts (I like walnuts)
Sift the dry ingredients together, cut in the shortning, add the rest of the ingredients. Stir JUST to moisten it all.
Pour into the greased pan and bake at 350 for 60 minutes. Cool and store in the fridge, if it lasts that long.

Have to put in my family's Cloud Biscuits recipe. biggrin Much like yours, but different (of course). Recipe makes 2 dozen smallish biscuits. 2 cups flour 4 teaspoons baking powder 1/2 teaspoon salt 1 Tablespoon sugar 1/2 cup shortning (lard if it doesn't scare you) 1 beaten egg 2/3 cup buttermik Cut in the shortning gently, then add the buttermilk, just enough to mix. Kneed on floured board only a few times... some say 5 times, some say 20 times. You'll find out after you've made a batch or two. Gentle is the word with biscuits. Roll with a floured rolling pen until you have a spread of buscuit dough about an inch thick. Cut into 2 to 3 inch rounds. Bake in 450 degree oven for 10 to 14 minutes... check and when the tops are golden brown, they are done. As the above recipe, use the leftover scraps to carefully press into a flat dough and cut them into rounds. Scraps left from that are put in the oven for a quick bake and given to the children, usually with applebutter on them. Or honey. mmmmm

I used to make them all pretty with the round cutters and all, but I find this works just as well. Mustang, you should try beer biscuits sometime. they are great also.

nicolklm I have become so half assed lazy lately that when I make them, I just roll them out into a square and then just cut them into squares. I used to make them all pretty with the round cutters and all, but I find this works just as well. Mustang, you should try beer biscuits sometime. they are great also. OMG, put the recipe in here! Sounds like they'd really be light.

DIRECTIONS: Preheat oven to 450 degrees F (230 degrees C). Sift together flour, baking powder, and salt. Cut in shortening until it has cornmeal consistency. Stir in beer, and knead lightly. Roll dough out to 1/2 inch thickness. Cut with biscuit cutter. Bake 10 to 12 minutes, or until golden brown.

Bake 10 to 12 minutes, or until golden brown. Sounds great! Beer does funny things to dishes off all kinds. I guess it's the yeast in it. I'll definitely try this. Another way to do biscuits is just to roll the dough into a rectangle and fit it into a greased pan. Then when done, you just cut them into squares. Easier than using a biscuit cutter and they still have that great taste. I believe that is a Southern recipe.

~CHOCOLATE ZUCCHINI BREAD~ this is a great recipe and you cant even tell there is zucchini in it! 3 eggs, 2 c. sugar 1c. oil, 2 0z. bitter chocolate -melted, 1 tsp. salt, 1 tsp. cinnamon, 1 tsp. vanilla, 2 c. grated zucchini (no seeds or peelings) 3 c. flour, 1/4tsp. baking powder, 1tsp. baking soda, 1/2c. chocolate chips. greased pans well. Beat eggs well till lemon colored. Beat in sugar and oil. Stir melted chocolate into egg mixture along with zucchini and vanilla. Sift flour with salt, cinnamon, baking powder, baking soda. With spoon , mix into zucchini , then add chocolate chips and mix thoroughly. Pour into 2 loaf pans. Bake 1 hour at 350 degrees. domokun
