Spinach Alfredo Lasagna
Boil lasagna noodles in a big pot of water with some salt in it for 10 minutes, or recommended time.
Mix together the following in a big bowl: 1 jar alfredo sauce (leaving a small bit in the jar for top layer) 1 container ricotta cheese shredded mozarrella, as much as you like 1 can spinach
Drain noodles and lay out on foil so they don't stick together
Alternate layers of sauce mix and noodles in a rectangular dish, starting with the sauce mix
Over the last layer of noodles, spread the last of the alfredo sauce, cover with mozarrella cheese, cover dish with aluminum foil, and bake for 20-30 minutes at about 375 degrees
Tada! YUM!

Fried Chicken
With boneless chicken breast or tenders, cut into small pieces (great for nuggets), dip chicken in a mix of milk and 1 raw egg, and then roll chicken in Italian bread crumbs. Fry in a tiny bit of olive oil or vegetable oil in a skillet (just so it doesn't stick.)
Tada! YUM!

Butter Potatoes
Haha, this one's dead easy!
Get a can of whole white potatoes Cut into scalloped slices (EDIT - actually there are canned sliced white potatoes! even easier!) Add about 1/3 stick of real butter, salt, and pepper Bake in a dish for about 10-15 minutes at 375 or so
Tada! YUM!

...makes note to self, do not read recipes late at night when you are hungry! i have a yearning for spinach and mushroom lasagne now! i have a recipe that says it serves 4 but i eat most of it in one go redface

Okay, here;s an easy one that we make all the time. It' a healthyer twist on Chickn Broccoli Alfredo.
Cook up some skinless boneless chicken breast (one breast per pserson is usually a good estimate) in the oven or a George Foreman grill.
While that's cooking, start the water for ziti (or other pasta, your preference on shape and type)
In a large (as big as you have!!!!) frying pan (or wok), start cooking the broccoli till it's just tender. Take off from the heat.
Once the chicken is done about 2/3, cut it into bite-size pieces and add to the broccoli with olive oil--just enough to make a nice coating. Crush a couple garlic cloves (or use garlic powder, whatever you have) and add that in, stiring to keep everything from burning.
Put the chicken/broccoli over the pasta and enjoy!!

Couple questions: when you first cook the broccoli, is it just in the pan by itself, or do you add oil or water?
Also, is there any alfredo sauce (or other spices?) or is the alfredo part just implied?

Also, is there any alfredo sauce (or other spices?) or is the alfredo part just implied? Nope, no alfredo sauce at all...I was comparing it to that dish for those that have had that. Although, if you want, you may make it with alfredo sauce and just cancel the oil and garlic. As for the broccoli, cook it however you are most used to. I will usually steam or jsut put some cooking spray in the pan. Make sure you don't cook the broccoli TOO much, unless oyu like it soft. Or, you can cook everything thouroughly before combining them with the olive oil and garlic.

its not much of a recipe but I love to make bagel pizza's. Its quick and easy.
Cut the bagel in half and put your favorite sauce on it. Pasta or you can buy a can of pizza sauce. Add whatever your favorite toppings are, cheese,pepperoni slices,etc,Then you can either bake in oven or in microwave.
Tasty treat. biggrin

Found an uber easy recipe for roast I'm gonna try tonight!
NEVER FAIL ROAST BEEF 2 to 4 rib roast of beef 4 1/2 to 12 lbs. Flour Salt Pepper Remove roast from refrigerator 2 1/2 to 4 hours before cooking. Preheat oven to 500 degrees. Place roast in shallow open pan, fat side up. Sprinkle and rub in a little flour, salt and pepper. Put roast in oven and roast 6 minutes per pound, timing exactly to the minute. When cooking time is finished, turn off the oven. DO NOT OPEN OVEN DOOR AT ANY TIME!! Allow roast to remain in oven for two hours and again, DO NOT OPEN DOOR. Beef will be medium rare.
Let's hope it turns out okay! I'm gonna add chili spices to it as well and serve it with mashed potatoes.

MysticfawN I want to know how it turned out too! heart I had a bad day yesterday (female things...gotta love it) so we went with KFC last night for dinner. I'm gonna try it Monday for sure tho. I'm excited! edit: kevin opted for potpies yesterday...so it's tonight for sure...poor roast beef

Well, kevin's last day at his cafe where he steals me the wonderful chai mix is today so i had to make a "recipe" for chai that would be close and I think I found it. You know those chai bags you can buy? Well brew one of those for about 5 minutes and then add a rounded teaspoon or condensed sweetend milk and a regular teaspoon of brown sugar....YUM! Then you may have to heat it in the microwave for a minute depending on how hot your water was originally. It tastes almost exactly like the powder he was getting me...which is good cuz i got addicted to it over the last few months.
