Oookay... time to pull from memory what I remember about this.
For starters, you need to buy stables at the chocobo farm, one or two to start with, more as you breed them. You can get as many as six. Then you need some rather mundane yellow chocobos. I usually catch mine at the tracks near Icicle Inn (North Continent). I'd usually wander around until I'd caught four (which is as many as can stand in the fenced area outside the barn).
Talk to Choco Billy and chose which chocobo you want to keep in the stables. From Icicle Inn, they'll either be wonderful (running) or weak (sulking). Keep the wonderful, ditch the weak. You'll want one female, one male.
Now comes the expensive part; Racing. At this point you'll want to buy a lifetime pass to the Gold Saucer. Chocobos have to be raced to go up in Rank. In the chocobo square you'll find Ester, who will register Cloud (sometimes Tifa or Cid will ask to race, if they're in your party) for the next race. Your chocobo has to win at least two long and one short race (not in a row, just in total) to move up in rank. At the start of a race, you'll want to hit "Select" to shift to manual mode, then hold down L1+L2+R1+R2 to charge your chocobos stamina while racing. Pressing down on square will make it speed up, X will slow down, and O gives you the sprint you should save for the end of the race, or to get out of a pack.
When your chocobo starts going up in rank, you'll find that its stats aren't high enough to compete. At this point you'll have to go back to the chocobo sage to buy greens. Feeding your chocobo greens increases its stats. Sylkis greens are my choice, but they're the most expensive. After getting W-item you can use the copy item cheat to buy two sylkis greens, and continually replenish your supply.
Once your chocobos are up to ranks S and A (somehow it's easier to get what you want if they're different ranks) use a carob nut to breed them (this nut can be stolen from the Vlakrodos monster, found on green areas of the North Continent. It looks like a large mechanical velociraptor). Make sure you save before you attempt breeding, because it's entirely random what you'll get. If you get a blue or green, save, and go race and feed the newborn until its rank is S.
Hopefully by the time you get done with the baby, the parents will be able to breed again. Once again, you'll want to save and have a carob nut. Keep resetting until you get the opposite color, opposite gender to the first colored chocobo (as in, if the first is a male blue, don't settle for anything but a female green on the second). Go back to racing until this one is S Rank.
I believe the green and blue also need the carob nut to breed, and once again you should save beforehand. Don't accept anything but a black chocobo. Feed and race the black until it reaches S class.
Once again before attempting to breed chocobos, save. The black should be bred with one of your original wonderful chocobos (after the blue and green are born, you can go ahead and race the A class one up to S class). This time, you use a Zeio nut, which is stolen from the Goblins on Goblin Island (it's one in the upper right corner of the world map, just south of the round island. The highwind can land there, and the goblins are in the forest).
If you are lucky, you'll get a gold chocobo on the first try. You can race and feed it, but it's class doesn't matter so much.

Yellow Male Great Chocobo + Yellow Female Good Chocobo = Carob Nut = Green Mountain Chocobo.
Yellow Female Great Chocobo + Yellow Male Good Chocobo + Carob Nut = Blue Lake Chocobo
Blue Lake Chocobo + Green Mountain Chocobo + Carob Nut = Black Mountain Chocobo.
Black Mountain Chocobo + Yellow Wonderful Chocobo + Zeio Nut = Gold Chocobo
All must be Rank A or S

I don't think they have to be A or S rank, I was told that the higher the rank the higher the chance of getting the wanted chocobo.

Try getting one of your pair up to S, and then keep trying on the carob nut. It takes a lot of patience and restarting.

ive found if you get your chocobos up to S class you have a much much much higher chance of getting the disered chocobo, and also when you breed S class chocobos better triats are passed on to the next geniration of chocobo.
also use diffrent parents for the green and blue chocobos as this also results in better chocobos over all.

no i know for a fact that they need to be S rank. and u also need the right nut. if u want the carob nut just keep making ur S rank race and take the GP for it. also there is a man outside of the place in the back corner of the screen at the entrance of the park. if he isn't there leave and come back he will eventually be there. u can get up to the exchange rate is 10 gil = 1 gp. u can get up to 100 gp each time.
