I learned this from a Vietnamese lady, so it probably also counts as an International recipe, but since it's vegan, I thought it'd be appropriate to post here.

EGGPLANT STIR FRY

Ingredients:
- 1 eggplant, sliced (I cut mine slightly diagonally for a more interesting shape)
- 1/2 to 1 onion, chopped (this depends on how much you like onions; I cut it radially, like a pie, so that each piece has tapered ends)
- green onions, chopped & to taste (usually about 2 stalks for me)
- dried red chili peppers, to taste (just maybe 2-3)
- vegetarian hoisin sauce*, to taste
- vegetable oil

Directions:
1. Heat up a pan with vegetable oil, just enough to roughly coat the bottom of the pan. Add in onions and saute until golden.
2. Add in spiced eggplant and vegetarian hoisin sauce - not too much sauce, but just enough to coat everything very lightly. Toss veggies in the sauce to coat evenly.
3. When the eggplant starts looking cooked, throw in the dried peppers (if you like a little spicy flavor) and heat for maybe another minute or two.
4. Remove from heat, transfer to a dish, and sprinkle the green onion on top.
5. Enjoy - it's good with steamed rice. smile

* Vegetarian hoisin sauce is available at Asian markets (and sometimes in ordinary grocery stores around where I live), or if you don't have any in your area, online stores like Amazon Grocery carry it too.
