In the story of sodom and gomorrah. Lot offers his daughters to the men outside to protect the visitors. Why would he do that?

Ummmm... It happened a couple thousand years ago, and isn't all that important to the story. Besides, his own daughters had sex with him to get pregnant, so I would think that they wanted to go out??? confused

Above your family and yourself. Above duty, love, life and personal honour. To extend your hospitality to someone was seen as something holy and sacred, and you had a duty to your guests.

Although in Arabia, that was only necessary if they ate salt under your roof, in which case they weren't allowed to harm you and you had to do all in your power to protect them.

Well, if you look in the Kabbalah, you'll find stories of Lilith, Adam's first wife. She was (by her own approximation) Adam's equal, and Adam complained to the Almighty, and she was cast out of Eden.
