Has anyone ever made a corn casserole or a corn souffle? They have been popping up in restaurants where I live and are actually pretty good.

I bet they are common down south. I live in the northwest though.

oh yes! take a look at allrecipes.com

I've also seen several corn pudding recipes. I would guess that you separate the egg whites and beat them to stiff peaks to make it into a souffle.
