Should I say Inuyasha, Full Metal Panic.
I don’t think there is an appropriate answer to this question.
Because there is no such thing as the greatest.
I might say one anime, but someone will definitely disagree.
And the only way anyone could answer this question, is if they have seen every single anime, ever made.
Perhaps you should rephrase it to:
“What is the greatest anime, that you have seen?”
