I am a big yuri fan, but the only comics/manga I've found with good lesbian pairings and characters are Sailor Moon and Utena. Anyone have any other manga recommendations?

I suggest going to the shoujoai.com forums. That's where I learned most of the *good* shoujo-ais. But there are some I can recomend:
Kannazuki no Miko (If you don't like implied lesbian rape that proceeds the two girls falling in love, then it is not recomended.)
Maria-sama ga Miteru (nice anime, not much to say about it now.)
Strawberry Panic (Best shoujo-ai ever, in my opinion, it's mostly fluff)

[EDIT: Yuri is the term used for X-rated girlxgirl. Shoujo-ai is much less....erm....explicit.]

Aoi Nanase's "Angel Dust" is a one shot manga about a shoujo-ai couple. They're not an actual couple but the fact they like eachother is implied pretty well. I think it's cute, plus it's one of the few shoujo-ai mangas you can easily find these days xp .
