Roasted Potatoes Paprika
Skill Level 2 Ease Level 2 Prep Time 20 minutes Baking time 25 minutes
6 red potatoes, cut into 1/2 inch round slices 3/4 cup butter 1 small onion, chopped 3 T. Spanish Paprika Salt and Pepper to taste
Preheat oven to 375 degrees. Slice potatoes and place in cold bowl of water. Melt butter in an ovenproof skillet, add onion and cook until softened about 5 minutes. Add paprika and salt, stirring about 2 minutes. Drain potatoes and toss with paprika mixture, stirring to coat potatoes. Place skillet in oven, bake 25 minutes, uncovered, and serve. I found that cast iron skillets work best for this.

MEDITERRANEAN ROAST POTATOES
Skill Level 1.5 Ease Level 1.5 Prep Time 5 minutes Baking Time 60 minutes
4 potatoes (red or Yukon gold) 1 onion 3 plum tomatoes, seeded 1 tablespoons chopped fresh rosemary 1 tablespoon chopped fresh thyme salt and freshly ground pepper 3 tablespoons olive oil
Preheat oven to 400° F. Cut potatoes in half, lengthwise, and each half into 3 pieces. Cut onion in half and cut each half into 4. Cut tomatoes into quarters. Combine all ingredients with olive oil in a metal baking dish. Bake for 1 hour or until potatoes are browned and crisp. Serves 4 Note: Excellent served with fowl.

Summer Squash Cakes
Skill Level 1.5 Ease Level 1.5 Prep Time 10 minutes Cooking time 5 minutes
4-5 medium summer squash, yellow, zucchini, or a mixture of both 1 small onion (optional) 1/2 - 1 cup shredded cheese 1-2 eggs flour salt and pepper
Shred the squash and onion. Mix together with beaten egg, cheese, salt and pepper. Add enough flour to make a batter-like substance, fairly thick. Heat non-stick griddle, or griddle sprayed with non-stick spray. Place mixture on hot griddle in about 3-4 inch rounds, flattening slightly. There will be no expansion, so you can place them close together. Cook on one side until golden brown, about 5 min. Turn and cook other side. Keep warm in 250 degree oven while others cook. Serve warm.

Zippy Bacon Potato Salad
Skill Level 2 Ease Level 2 Prep Time 2 hrs Cook Time 30 Minutes
6 medium-size red potatoes 1/2 teaspoon white pepper 1/4 cup sliced green onion 1/4 cup plain yogurt 2 tablespoons lemon juice 1 Real Bacon Bits (3-ounce) jar 1/4 cup mayonnaise or salad dressing 2 tablespoons crumbled blue cheese
Cook potatoes in boiling water until tender; peel and cut into 1/2-inch cubes. Combine lemon juice and pepper. Drizzle over potato cubes while warm. Cool. Add bacon bits and green onion. Combine mayonnaise, yogurt and blue cheese. Pour mayonnaise mixture over potato mixture. Toss to combine. Cover and chill thorougly. Makes 10 servings

Twice Baked Potatoes
Skill Level 1.5 Ease Level 1.5 Prep Time 10 minutes Baking time 60 minute plus 30
8 to 10 med. baking potatoes 1 bunch scallions, chives or leeks (optional) 1/2 lb. bacon, fried & crumbled 1/2 lb. shredded cheddar cheese 1/2 stick butter 1/2 stick butter 1 c. sour cream Paprika
Bake potatoes at 375 degrees for 1 hour. Mix remaining ingredients, but paprika, in a large bowl. Place them on top of stove to melt slightly for a tastier dish. Remove potatoes from oven, when they can be poked easily with a fork. Cut potatoes in half and scoop them into a large bowl with first 6 ingredients. Mash, adding small amount of milk, if necessary. Refill shells and place in a large baking dish. Sprinkle lightly with paprika and put them back into oven for 30 minutes at 375 degrees. Allow them to cool slightly before serving.

Oven Roasted Garlic Potatoes
Skill Level 1.5 Ease Level 1.5 Prep Time 10 minutes, Baking time 60 minutes
About 10 regular or red potatoes, scrubbed and peeled; (if using the red ones, leave the skins on) 4 cloves of garlic, peeled and mashed 1 teaspoon granulated garlic 2 teaspoons paprika 2 tablespoons olive oil
Preheat the oven to 400 degrees; Cut the potatoes into quarters and place in a large baking pan; Sprinkle the mashed garlic and granulated garlic around the potato pieces; Shake the paprika on top of the "garlicked" potatoes; Spoon the oil all around the top of the potatoes, coating well; Cover the pan with tin foil and place in the preheated oven for about 1 hour, checking about every 20 minutes to stir. Keep checking, so as not to burn.

Cheesy Potato Dish
Skill Level: 1 Ease: 1 Prep Time: 20 minutes + 30 minutes cooking
Ingredients:
24 oz Ore-Ida Potatoes O-Bryan 8 oz Cheez-Whiz (Ragu Cheese Sauce for smoother texture) 16 oz Sour Cream 1 can Cream of Chicken Soup (can substitute cream of celery) Buttered Cornflakes
Instructions:
That potatoes. Put in ungreased long pan. Mix cheez whiz, sour cream, and soup. Heat until warm (not boiling). Pour over potatoes. Sprinkle with buttered cornflakes. Melt butter and pour over cornflakes until coated.
Bake 350 degrees for 30 minutes or until bubbly.
Comments:
This makes a great dish to take over someplace. However, when you heat this back up or if it has been sitting a day or so in the refrigerator, then the Cornflake topping tends to get a little soggy.

Hash Brown Casserole
Skill Level: 1 Ease: 1
Ingredients: One 2 lb bag of frozen hash brown potatoes ½ cup chopped onion ½ cup melted margarine or butter (save ½ for top) 1 ten oz package of grated cheddar cheese 1 can cream of chicken soup 1 tsp salt ½ teaspoon black pepper 1 cup sour cream bread crumbs
Directions: Mix all ingredients together except the reserved butter and bread crumbs. Place in well greased casserole; sprinkle top with butter and bread crumbs. Bake one hour and ten minutes at 350 degrees.
