I was just wondering if it would be possible to use the claim of intimidation as an excuse for excessively beating someone. (Kind of like beating the crap out of one person, instead of knocking out all of them.)

Sorry. sweatdrop You mentioned stomping on someone's head in order to intimidate their friends, right? If you got in trouble with the police, would it be feasible to say something like "I only stomped on his head because I wanted to scare the others way"? As in, you only stomped on his head because you didn't want to fight all the other people?
All I would say is that I was out numbered and used reasonible force to remedy the situation. If it was in a public I wouldn't stamp but if it wasn't in public then the gloves are off.
You don't have to stamp on his head. You could do it on his ribs (more effective in terms of damage) but nothing sends the messsage 'don't ********' better than when they see their friends head bounce off the concrete. A more heathly alternative would be to stamp on the back of his ankles (if it's practical at the time), that sweet snapping noise is more than enough of a deterant.
Another good stomping alternative is the hands. It only takes about 30 pounds of pressure on unconditioned hands to break them, and the average person can deliver well over thirty pounds when they stomp. You won't get the cracking sound of the back of the ankles, but you will get the sound of the attacker shreiking like hell.
