Thursday night I soaked some Great Northern Beans so I could cook them in my crock pot the next day. Friday morning, they didn't seem plump enough, but I went ahead and put them in the crock pot anyway. Friday night they were still hard.
The beans weren't old, I checked the date. They looked nice and smooth and fresh. (Well, as fresh as something that's dried can look.) My crock pot seems to be working fine. I did not add salt and there was no meat in them. Beans, garlic, onions, bay leaves, carrots, thyme and water were all that I used.
The only thing I can think is that part of the soaking water was cold from the refrigerator. I don't like the taste of our well water, so I use bottled water for cooking and drinking. But, they sat out on the counter all night with a lid on them.
We're going to try them for lunch today (Saturday). Why do you think they were still hard after being soaked for 8 hours and cooked in the crock pot for 12 more?
