I would definetly choose Hinata! blaugh In one naruto episode ( filler ) they all had to do a survival training where they had to become sesneis and lead their own team to a moutain peak and get a scroll and bring it back. it was a two day one night exam. she did great! And besides that shes soooo cool and smart!!

My female teacher would be Hinata , she has a lot of patience , she'll need with me as her pupil.
As for male teacher ... like you mentioned Lee would be awesome as a taijutsu teacher. And Kankuro well just because I like the idea of mastering puppets.
Though Kakashi is just plain awesome. I think I want them all as a teacher.
