Another one of my favorite foods.
Kappa-Maki....
NGREDIENTS:
* 4 cups sushi rice (jasmine rice will do) * 4 sheets of nori (dried seaweed) * 2-3 T sweet rice vinegar * 1 cucumber
Optional: wasabi (Japanese horseradish) and soy sauce for dipping.
PREPARATION: Cut the cucumber into thin and long sticks. Put a nori sheet on top of a bamboo mat (makisu). Mix the rice vinegar into the rice. Spread sushi rice on top of the nori sheet. Place the cucumber sticks lengthwise on the rice.
Roll up the bamboo mat, pressing forward to shape the sushi into a cylinder. Press the bamboo mat firmly and remove it from the sushi. Cut the rolled sushi into bite-sized pieces.
Dip in some soy sauce and spread a little wasabi (a little goes a long way) and eat. ^^

Oh it is. It sounds weird to put soy sauce on the bottom of your kappa-maki and a little wasabi on top... but its really delicious and filling. ^^
