Well, from what I remember of the Zombie Survival Guide they have some sort of undetermined ability that lets them distinct between dead and living. According to the Guide if you tried a "Shaun of the Dead approach" you'd end up eaten or zombified.

...Also, zombies are the result of infection by a virus classified as Solanum. People are "zombified" when there is a transmission of infected fluids into a non-infected individual (via bites or zombie blood coming into contact with a victim's open wound).
Zombies having yellow eyes is just a Hollywood thing. Many zombies have the same color eyes (if they haven't rotted away) as the human they had changed from.
