Most of my days are busy. I need recipes that doesn't take a whole lot of time, money and effort to make. These recipes are simple, tasty and easy on the wallet. Add veggies like eggplant, zucchini, or peppers and meats like hot italian sausage, ground beef, chicken, or veggie meats to the recipes. Buon appetito! 4laugh



Pasta Dough
If you have a pasta machine this will be quick and easy.

You Will Need:
1 pound all-purpose flour
2 large eggs and 8 egg yolks
1 tsp salt
1 tbsp extra virgin olive oil

Combine the flour and salt in a food processor. Mix well. With the machine running, add the eggs, yolks, salt, and oil through, and process for about 2 minutes. Take a handful of dough at a time and form into a firm ball. Repeat with the remaining dough. Roll out each dough ball into desired shape in a pasta machine according to the manufacturer's instructions.
Bring a pot of salted water to the boil and cook the pasta until just al dente, about 2 minutes. Drain in a colander and serve with desired sauce.

There are other pasta dough recipies out there but I use this one from Emeril.

Pasta with pesto


You will need:
-1lb dried tagliatelle
-salt
-fresh basil sprigs

pesto
-2 garlic cloves
-1/4 cup pine nuts
-large pinch of sea salt
-4 oz fresh basil leaves
-1/2 cup olive oil
-1/2 cup freshly grated parmesan cheese

To make pesto, put garlic, pine nuts, and sea salt in a blender or food processor and blend briefly. Add the basil leaves and blend into a paste. Slowly add oil while motor is still running. scrape into bowl. combine the mixture with parmesan cheese. Season with salt.

Boil the tagliatelle as directed on the container. Drain well. Place back in pan and mix in half the pesto. Serve and top with more pesto and garnish with fresh basil.


Spaghetti Olio e Aglio

You will need:
-1lb dried spaghetti
-1/2 cup olive oil
-3 garlic cloves, chopped finely
3 tbsp chopped fresh flat-leaf parsley
salt and pepper

Cook pasta as dirrected on container. Meanwhile, heat the oil in a skillet on low heat. Add the garlic and a pinch of salt. Cook, stirring occasionally,
for about 3-4 minutes. Don't let the garlic get brown. Remove from heat. Drain pasta and place in a large bowl. Pour the garlic flavored oil and add parsley, salt, pepper. Toss and serve!


Cheap Baked Ziti

You will need:
1 16oz box of ziti
1lb of browned and drained ground beef or use veggie beef (optional)
1 jar of your favorite spagheti sauce
1 package of shedded Mozzarella

Cook ziti according to directions on package and drain. Brown meat and drain. Mix ziti half the sauce, and meat into a baking pan. Pour the rest of sauce and top with Mozzarella. Bake at 350 degrees and come back in about 45 minutes. Serve.
