I made something like this before. It's not quite what I had but it looks good. Diet Pumpkin Muffins
2 eggs, beaten (or 3 egg whites or egg beaters) 1 c. pumpkin 2/3 c. instant non-fat dry milk (use dry) 2 tsp. pumpkin pie spice 1 tsp. cinnamon 8 pkg. Sweet & Low<---- I don't believe in using low calorie sweetners so I just use honey instead... 1/2 c. grated carrots 1/3 c. flour 1/4 c. raisins 1 tsp. soda 1 tsp. vanilla
Beat eggs in bowl. Add all other ingredients and mix well. Spray muffin pan with Pam. Spoon into 12 large or 24 mini muffins. Bake at 350 degrees for 15 minutes. Keep refrigerated. May be frozen.

how many calleries per pumpkin muffin?
Chicken and herbs - one portion of chicken breast, no skin - mixed herbs - lemon juice 150 caleries
deforst the chicken portion sprinkle herbs and lemon juice on. rap up in tin foil and cook in oven at about 190-200 C for aprox 30 minutes
add any sides you may like, like peas, spagetti, potato's etc.
