I made these for my birthday and they turned out amazing! Raspberry Filled Lemon Cupckaes I used this to frost them Cream cheese buttercream but added raspberry syrup. I actually found out that the reason I've thought I don't like buttercream frosting is that I don't like the american version- which is what most grocery stores use. There are other versions of buttercream that I love!

Malikztiah Ankhwave The Carrot Pie (as found in B. Dyllan Hollis' Baking Yesteryear Personal aside: I prefer to halve the amount of cinnamon because it can just overwhelm the carrot, but it's still good! If you like Carrot Cake, and like me are not a fan of pumpkin or sweet potato but still want that "fall/x-mas" pie this is a good swap~

Corn Pie (Pastel de elote) from Sunset Magazine's Mexican Cookbook (1969)
1 cup butter or margarine (best if softened) 1 cup sugar 4 eggs 1 can (4 oz) California green chiles, seeded and chopped 1 can (1 lb) cream-style golden bantam corn ½ cup shredded jack cheese ½ cup shredded mild Cheddar cheese 1 cup regular, all-purpose flour 1 cup yellow cornmeal 4 teaspoons baking powder ¼ teaspoon salt
Preheat oven to 350°F. Cream butter and sugar. Add eggs, mix well. Add chiles, corn, and cheese mix. Add cornmeal, flour (I don't sift the flour, but the recipe recommends sifting the cornmeal and flour), baking powder, and salt. Put into a greased and floured pan (8 by 12 by 2 inches). Put the dish in the oven and reduce the heat to 300. Bake for one hour. Serves 10.
When I'm short on time, I will use cornbread mix instead of flour and cornmeal. It isn't as good or as soft as the scratch version (which, in the best way gives you a texture between corn pudding and cornbread), but it still makes delicious cornbread.
