This recipe is a little tricky, in that there's a lot to take care of all at once. My boyfriend and I tagteam on it so nothing gets too cold or burned. Be sure to have a respectable amount of counter space cleared off.

ingredients:

1 tsp olive oil
8 oz sliced white or cremini mushrooms
1 small onion, finely chopped
1/2 pound pork tenderloin, chopped
1/4 tsp salt (or just a dash to taste)
1/4 tsp cumin seeds
1/2 cup roasted tomato or regular salsa
4 (6-inch) flour tortillas
1/4 cup shredded pepperjack cheese


Heat the oil in a large nonstick skillet over high heat. Add the mushrooms and onion and cook until tender; transfer to a bowl.

Sprinkle the pork with the salt and add to the skillet; sprinkle with cumin. Cook over high heat, stilling, until the pork is browned. Stir in the salsa and the mushroom mixture, and cook until heated through. Transfer to a bowl and wipe the skillet clean with paper towels or a slightly damp cloth. It doesn't hurt here to stuff an absorbant paper towel or two down into the corner of the pork mixture bowl to absorb some extra liquid. These guys are messy enough to eat without them dripping everywhere too. X3

Spray the skillet with nonstick spray and set over medium heat. Cook tortillas, one at a time, just until golden on the bottom. Place the tortillas, toasted side up, on a work surface. Spread a quarter of the pork mixture over half of each tortilla and sprinkle with a third of the cheese. Fold the unfilled tortilla half over the filling.

Spray the skillet with nonstick spray and set over medium heat. Add the tacos to the skillet and cook, turning once with a large spatula, until golden, about a minute on each side.

Transfer to two plates and put lots of napkins on the side. lol
