Vegi dishes

So I was curious if any one knew of some really good vegi dishes? All the recipes or sites provided would rock. Thanks alot.

No official recipies, but, if you're in the mood for something hot, vegetarian chili can be very good. Just make it normally, but use more beans instead of beef. Add some shredded cheese on top, and it's actually very tasty and satisfying.

My mom also makes tacos and lasagna using Boca vegetarian ground beef instead of real beef. It tastes a little different, but I'm quite used to it, and I like it. Vegetarian hot dogs tend to have really tough outsides, but they're really good wrapped in crescent rolls (like normal pigs in a blanket).

Yeah, I'm not sure if any of that actually helps, but those are things my mom makes for us, since she's vegetarian.

I tried the vegetarian lifestyle for about 6 months, so I've collected some pretty good dishes. I eat meat now, but not as much and I find I eat a much larger variety of foods. I'll post some of the recipes I found to be quite tasty and easy to make.

Taco Salad


Ingredients:
1 med chopped onion
1 med chopped green bell pepper
1 can spicy chili beans (undrained)
1 cup chunky salsa
1/2 cup corn
6 cups torn romaine lettuce
1 cup shredded cheddar
2 cups tortilla chips
1/4 cup sour cream
cilantro leaves

1) Spray skillet with cooking spray and heat. Add onions and peppers and cook and stir for 5 min (until nearly tender). Add beans, salsa, and corn. Cover and simmer 3 min.
2) Arrange lettuce in bowl or plate.
3) Add veggie mixture and top with cheese, chips, sour cream, and cilantro.

Recipe makes 4 servings and takes about 30 min.

California Tortellini Salad


Ingredients:
1 pkg cheese-filled tortellinis (refrigerated 9 oz pkg)
1 small avocado, cubed
1 tbsp lemon juice
1 cup cherry tomatoes
1/4 cup chopped green onions
1/2 med cucumber, quartered
1/3 cup ranch dressing

1) Cook tortellinis as directed on pkg. Drain and let cool.
2) Combine all other ingredients in large bowl.
3) Add tortellinis to other ingredients, mix, and serve.

Recipe makes 4 servings and takes about 30 min.

Asian Peanut-Vegetable Salad


Salad Ingredients:
3 cups coleslaw mix
1 cup trimmed snow peas
1 cup quartered baby carrots
1 small red bell pepper, cut in strips
1 pkg ramen noodles (without seasoning pkg), crumbled
1/4 cup chopped dry-roasted peanuts

Dressing Ingredients:
3 tbsp oil
3 tbsp peanut butter
1/4 cup rice vinegar
2 tbsp soy sauce
1 tsp grated ginger
1/8 tsp crushed red pepper flakes

1) Combine oil and peanut butter and mix until well blended.
2) Add all other dressing ingredients to oil/peanut butter and mix.
3) Combine all salad ingredients and mix.
4) Add dressing to salad, mix and serve.

Makes 4 servings and takes 30 min.

Ravioli with Veggies


Ingredients:
1 9oz pkg refrigerated cheese-filled ravioli
1 tbsp olive or veg oil
2 cups fresh green beans, trimmed and cut
1 small onion cut into wedges
1/2 XL vegetarian vegetable bouillon cube
1 1/2 tsp chopped fresh marjoram (or 1/2 tsp dried)
1/4 tsp garlic powder
1/8 tsp pepper
1/2 cup water
1 cup chopped Italian plum tomatoes
1/2 cup sweet peas
3 tbsp shredded fresh Parmesan

1) Cook ravioli as directed by pkg, drain.
2) Heat oil in skillet and add beans and onion. Cook and stir 3 min.
3) Add bouillon cube, marjoram, garlic powder, pepper, and water to beans and onion and cook 3-5 min.
4) Add tomatoes, peas, and ravioli, reduce heat to med-low and cook 3-5 more min (sauce should be slightly thickened).
5) Sprinkle with parmesan and serve.

Makes 3 servings in about 30 min.

Italian Rice and Veggie Dish


Ingredients:
1 tbsp olive or veg oil
1 cup thinly sliced carrots
1/2 cup chopped onion
1 stalk celery, thinly sliced
1 small zucchini or yellow summer squash, thinly sliced
3/4 cup uncooked rice
1 1/2 cups water
1 can kidney beans, drained and rinsed
1 can diced tomatoes with basil, garlic, and oregano (undrained)
1/2 tsp salt

1) Heat oil in sauce pan over med-high. Add carrots, onion, and celery. Cook and stir for 3 min.
2) Add zucchini and cook 2 min.
3) Stir in all other ingredients. Brind to boil, reduce heat to low, cover and simmer 15-20 min. Veggies should be tender and all liquid absorbed.
4) Serve.

This is really good with fresh parmesan sprinkled on top.

Makes 4 servings and takes about 45 min.

Vegetarian Lasagna


I don't have the recipe in front of me for this one.

1) Boil noodles.
2) In 9 X 13 inch pan, spread a layer of pasta sauce. Then layer noodles, fresh spinach leaves, sunflower kernels, slivered almonds, ricotta cheese, shredded swiss cheese, and shredded parmesan in that order. Continue layering until pan is full or you run out of ingredients.
3) Bake for about 45 min (I don't remember the temp, but last time I made it, I put it in at 450 F and it turned out fine).

Note: I usually go through about 9-12 noodles, half a jar of sauce, and a bag/container of each of the other ingredients.

I run a field crew consisting of carnivores, omnivores, and herbivores, and all of these recipes have been big hits. The tortellini salad is probably their favorite.

Awesome Recipe For Vegan Chili

1/2 of a medium sized onion, diced finely
1 whole green, red or yellow pepper, diced
2 cloves of garlice, minced finely
2 stalks of celery, chopped
combine together with 1/2 can of tomato paste in a medium pot on medium heat until the onions and peppers start to soften
Add 1 cup of vegetable broth, best if prepared yourself beforehand and frozen (recipe to come)
Stir in 1 can of kidney and brown beans
*optional* Add 1 cup of Bran Flakes

Season to taste (using any spices that can be used to season vegetables)
Simmer for a few minutes (8-10), then serve and enjoy.
