Microwavable Southwest Chicken Casserole:
From: All Recipes. I just checked over some reviews, revised the recipe, and added some other ideas to go along with it.
1 ( 5 ounce) can Chicken Chunks, drained 1 ( 4 ounce) Green Chilies or jalapeƱos 1 ( 10.75 ounce) condensed cream of Chicken Soup 2 Tablespoons Dried Minced Onions 1 + 1/4 Cup Water 2 Cups Instant Rice 1 Cup Shredded Monterey Jack Cheese or Mexican Style Cheese 1 Cup Shredded Cheddar Cheese Salt (to taste) Pepper (to taste) 1 Microwave Safe Casserole Style Dish that will fit in your microwave (You may want to mix in a large mixing bowl first. Then add to your microwavable bowl a little at a time so you don't over fill it.)
Directions:
1. Combine the Chicken, peppers, soup, cheeses, onions, salt, pepper, and water. 2. Add the rice. (should look like soupy pancake batter) 3. Spoon into your microwave safe dish. 4. Cover with microwave safe lid or plastic wrap. 5. Approximate Cook time is 15 minutes. 6. Let cool for a few minutes before removing lid/plastic wrap.
If you prefer to bake it in the oven:
Bake for 25 minutes with your oven set to 350 degrees.
Variations/Tips/Meal Ideas:
Add more chicken. Add more cheese/different cheese. Add corn/Mexican corn. Top with cheese, sour cream, & green onions. Top with cheese & green onions. Top with Salsa, sour cream, & green onions. Top with Salsa & sour cream. Top with tomatoes. Eat with a salad. Eat with tortilla chips/cheesy tortilla chips. Other ideas....
