Kashimashi was one of my favorites. It's a gender bender instead of straight yuri so I hope it's alright to recommend here. I personally read it as yuri, forgetting there was a guy in it at all after the first volume, save for when they mention it or something. Lol!
Strawberry Panic was great, though I never did finish it D:
I know it's also not strictly yuri, either, but Ranma 1/2 has some moments, too! That's all I can think of :c
