What is there to say about a man too drunk to remember his own name, that's right, Joe is not his real name for all we know. He woke up one day on the side the street and a guard asked him "Yo, Are you alright?" and he figured that was his name.
He just woke up one day, is literally his origin story. I could certainly go deeper then that, the man has an insane mastery in the art of making potions and such, but the only reason he got into the craft was to manufacture his infamous "Blackout juice" an alcoholic beverage so strong, that it has been legally categorized by the magic council as a deadly poison. The light version "Blackout juice light" is, legally, the strongest alcoholic drink in the world.
Perhaps due to his high knowledge in the art of potions, or his constant drinking, Joe has gained an absolute immunity to all sorts of poisons, and is able to determine the exact kind of poison by tasting it, and in an instant (if not distracted by the smallest of things) is able to tell you how to counter it.
Despite all of the before mentioned, Joe is by no means rich or famous, quite the contrary in fact, he is homeless and poor. He takes shelter in the nearest guild available, offering in exchange to brew potions and drinks while he stays there, he will also join a team in their mission for a small share of jewels without joining their guild, and perhaps out of pity, they let him.
