I want to build an assassin/thief build in skyrim, but I can't decide if I want to go Dark Elf, Breton, or Orc. I plan on turning the character into a vampire lord. I don't care about beginning stats, ignore those because I can work around that and turn any race into any build. I usually use the bow and arrow, dual wielding swords or daggers, use light armor, sneak alot, and the only magic I really use much is a little bit of illusion and some alchemy. I also focus on blacksmithing as well to improve my weapons and armor. So what race would be best?

I would go with the dark elf for what you seem to want. The dark elf fire resistance will really help eliminate the weakness to fire you get from being a vampire which will really help with those dragons and fire bosses. Also the flame cloak spell they start out with will help end close combat fights quickly when you first start out if you can remember to use it lol. The racial abilities are just more of a help to the assassin/thief than the breton or orc, and will help you through at least most of the game.
