History/Scifi, the Belisarius saga. Set in the time that the Roman empire was based in Constantinople, y'know, when the actual General Belisarius was alive, a ... being is sent back from the future, to combat another ... being, which was sent back to basically stop anything resembling evolution. 'Cause the ones who sent the first ... being, back, were obsessed and evil like that. The first one was sent to Belisarius, 'cause, who better to beat the other guys into the dirt, and the second, was sent to a fanatical section of the northern Indian kingdoms of the time. Since, you know, that was when the caste structure was strongest, really. And if I say any more, it's spoilers.

Military scifi, gotta say the Honor Harrington series. It's long, and awesome, and it's set in space. Also, there's a sentient, telepathic, empathic, little furry guy. And the rest of his race. Nimitz is awesome.

Fantasy, I'm stuck on The Deed of Paksenarrion atm, a trilogy of awesome. She goes from farmgirl to a member of a mercenary company, to ... actually, spoiler there, too. So that's all I can really say about how awesome it is.
